I work at a cafe and lately have been having some big fat issues with our espresso. No matter what I do I cannot get rid of this awful bitter almost metallic taste. I’ve tried under extraction to see if it changes and still the taste remains. The bean is a single origin brazil peaberry that is roasted by our own roaster(who I have my gripes with) in a fluid bed roaster. Usually the coffee is used within a week of its roast date, which I assume is the issue, but there is nothing I can do about it so I turn here for any advice. Is there anything else I should be aware of, or is it simply a matter of letting the coffee properly rest.
